New Dining Marketplace
Convenience Store

This Residence Hall Foodservice Marketplace project included replacing the original straight-line serving area with display cooking stations interspersed with dining areas. These stations are designed to prepare individual portions to demand, they include: a pizza and pasta area with stone-hearth oven and pasta cooker; a comfort food station with rotating smoker; an International station with interchangeable cooking equipment that allows for easy adaptation to different menus; and deli offering made-to-order toasted subs. The breakfast and dessert area were designed to look like a residential kitchen to help make students feel right at home.

Other areas of this project include a new convenience store and dishroom. Changes to the kitchen were limited to code improvements, space reduction and relocation of dry storage to a more convenient area. The foodservice area is approximately 26,000 sq. ft. and the equipment was valued at $2.3 million.
